All Around Town Catering's Southwest Chicken with Salsa Infused Rice [Cinco de Mayo]

4 boneless skinless chicken breast, marinated in olive oil and soy sauce

1/4 cup olive oil

1/2 cup diced bell pepper

1/2 cup diced onion

2 cups corn off the cob

1 Tbsp garlic

Blend of cumin, chili powder, salt and pepper

2 cups cooked rice

Dos Equis Amber lager

 

You want to get your oil hot and add corn until it starts to pop along with your bell pepper and onion. You can season your rice with the spice blend and salsa. Stir that up really well. Add a bit of amber lager to your corn to calm it down a bit. It will add a great flavor to it. Serve chicken over rice and the corn will be a perfect side. Will be great for Cinco de Mayo!

Country star Brad Paisley will be performing at the Tuscaloosa Amphitheater this summer as part of his Beat the Summer tour. Paisley will be joined by special guests Chris Young and Lee Brice.

The concert will be on Friday, June 14 at 7 p.m. Doors open at 6 p.m.

Law & Order actor to speack at TC Commencement

Talladega, Alabama—In November, 1867 Swayne School was opened with 140 pupils. Two years later in 1869, the Talladega County Probate Judge lawfully issued a charter for Swayne School to exist as Talladega College. Still, 145 years later, the commitment to education and academic excellence continues.

On Mother’s Day, Sunday, May 12, Talladega College will confer bachelor’s degrees upon its 138th graduating class. The speaker set for that event is television star, actor, comedian and writer, Anthony Anderson. Anderson plays as Detective Kevin Bernard on NBC’s hit series, “Law & Order.” Anderson has appeared in over 20 films. He has had roles alongside actors such as Leonardo DiCaprio, Matt Damon, Jack Nicholson, Eddie Murphy, Jim Carrey, Jack Black, Steve Martin and many more.

A New York State of Mind for Talladega College Convocation

Talladega, Alabama—Talladega College will host its annual Honors Convocation on Thursday, April 11th on the campus. The featured speaker of the event will be Dr. Debra M. Szybinski from NYU.

The event this year will honor nearly 500 students for their academic achievements during the spring semester of 2013.  Family, friends and visitors will be in attendance as the college celebrates these scholars and listens to Dr. Szybinski’s address.

Dr. Szybinski is the executive director of the Faculty Resource Network at New York University, which is a national partnership that comprises over 50 colleges and universities in the nation that’s devoted to faculty development. Talladega College is a member of the NYU Faculty Resource Network.

Body found in Talladega Co. identified as missing Shelby Co. teen

TALLADEGA COUNTY, AL (WBRC)- Talladega County Corner Shaddix Murphy has positively identified the body found in Talladega County as Cameron McGlothan, the 19-year-old reported missing out of Shelby County.

The Talladega County Sheriff's Office says McGlothan's death has been ruled as a homicide.

The coroner would not release the details of how McGlothan died or say when he died. Murphy said he used dental records to positively identify the body as McGlothan. His body was discovered on Sycamore Cemetery Road in the town of Sycamore, about five miles north of Sylacauga.
